Tasting Notes
Our long-time customers know that all our Fuding white teas are currently loose-leaf. Yet we’ve had countless requests for pressed tea cakes, so we chose Crystal Dew Shoumei—a close cousin to Cold Dew Shoumei—to craft into mini cakes this time. Perfectly portioned, just one mini cake per brew for effortless enjoyment!
Picked during the Crystal Dew solar term of autumn in China, this tea benefits greatly from the sharp day-night temperature differences of the season. The tea leaves accumulate abundant aromatic compounds and natural sugars via photosynthesis by day; as temperatures drop at night, leaf respiration slows, minimizing sugar consumption by the tea plant. As local tea farmers say, autumn-harvested tea boasts an exceptionally distinct sweetness.
Upon brewing, the mini cake releases an aroma of crisp autumn fallen leaves, with a rich woody core layered with unique floral and fruity notes, leading to a clean, fresh and sweet palate overall.
After 5 years of natural aging, this white tea develops a distinctive apple wood fragrance to my palate, with subtle, delightful apple fruity notes lingering through every sip
