In China, there is a sweet soup called Small Pear Soup, made by simmering pears with red dates, water, and a moderate amount of rock sugar. This Snow Pear tea shares many similarities with that soup—such as a subtle pear fragrance accompanied by a unique floral aroma. Although it is lightly to moderately roasted, we process it like traditional Chinese slow-simmered soup: it is roasted three times over gentle heat, akin to a mountain spring flowing slowly from a cliff.
