Tea: Special White Tea Supply - Organic Tea Garden 2022 White Peony
Source: Fuding Songyang Ecological Farm
Year: 2022
Characteristics: Woody, smooth, sweet, with honeysuckle fragrance

Notes:

This White Peony is produced by a very special organic ecological farm. Although all our products ensure the tea trees grow in a healthy and green environment, it is extremely difficult and rare in China to specially establish or convert a tea garden into an ecological one.
First, specialized ecological tea gardens require strict adherence to standards for ecological weeding, pest control, organic fertilizers, and stabilizing the tea garden's ecosystem, all of which incur very high management costs.
Second, this tea garden is a rare, top level tea garden in China. Taxus (Red Cedarwood) is a first-class protected plant in China with very low survival rate, but the Taxus trees in this garden are over 30 years old, and a large area of Taxus trees surround the tea garden.
Finally, special light-based pest control, pure manual weeding, soybean-based and cow dung organic fertilizers, as well as fallen leaves and fruits of Taxus trees serve as sources of soil nutrients.
Just imagine, natural anticancer components can be extracted from Taxus. If tea trees can absorb substances from their surroundings, could they absorb these special nutrients?

Tasting Note:
At the beginning, this tea already tastes like an aged white tea. None of the grassy flavors are present. Instead, it is a bit woody and very smooth. In the middle pours, the sweet aftertastes build resembling honeysuckle flowers. The pleasure of drinking the tea is matched by the lingering aftertastes, which make you want to slow down and enjoy it slowly. After the eight pour, the flavor is very consistent and you may find yourself licking your lips as you wait for the next cup.

Brewing Times Reference: >10 times

Brewing Suggestions:
For the first three infusions, use boiling water to pour clockwise along the inner wall of the gaiwan (lidded bowl) at a low height, and drain the tea soup at 7, 8, and 9 seconds respectively. For subsequent infusions, increase the steeping time by 2-3 seconds according to your taste. It is not recommended to let the tea sit in the bowl for too long~
