Tasting Notes:
1. First, a brief overview of Wuyi Rock Tea's production areas: there are three categories in Wuyi Mountain—core areas, semi-core areas, and high mountain areas. As a typical Danxia landform, the core and semi-core areas have richer gravel content, coupled with more superior geographical conditions, which inevitably influence the tea's taste. This Shuixian originates from the core area, hence its rich and layered flavor.
2. We call this tea "Tall Old Shuixian" (Gao Cong Shuixian) because the tea trees are over 30 years old and have never been artificially pruned. Like a person entering middle age, it boasts profound and mellow charm.
3. This Bishi Rock Tall Old Shuixian is made with light roasting, differing from the rich thickness of traditional Wuyi Rock Tea. The first brew offers an obvious sweet aftertaste—what I consider the mineral sweetness unique to genuine rock tea. The second brew reveals a faint orchid fragrance. From the third to the fourth brew, distinct minty notes emerge, bringing a refreshing herbal coolness to the mouth. By the fifth and sixth brews, the coolness fades slightly, giving way to a damp moss aroma, leaving the mouth feeling comfortable throughout. The whole experience is just like walking into the mountains on a hot and humid summer day: first sensing the mixed aroma of various herbs in the wild, then savoring the pure water from the mountains.
