Tasting Notes:
First of all, the Wintersweet variety is very interesting. It can be made into black tea or Wuyi rock tea. Its taste is relatively subtle, similar to the delicate fragrance when plum blossoms bloom in winter.
Early stage: When you first taste it, you will feel a relatively steady woody aroma that seems to carry a floral scent, but it is not very obvious. If you use a small-mouthed smelling cup for the second brewing, you can clearly feel the unique plum blossom aroma when the tea enters your mouth. The taste of the tea soup is mainly woody.
Middle stage: The woody aroma remains very stable, but an earthy aroma (which we interpret as a Chinese herbal medicine aroma) starts to emerge. However, I think it is a blend of woody and earthy flavors. After the tea enters the mouth, you can catch the delicate fragrance of wintersweet in the gaps where the tea flows.
Late stage: After brewing 6 times, when the previous woody aroma, herbal medicine aroma, and earthy aroma fade away, you will find that the sweetness that was not apparent in the early stage shows up later. It is a sweetness similar to that of sugarcane mixed with water, and it is still accompanied by a faint floral scent.
It is different from traditional Wuyi rock tea. With traditional rock tea, you can taste the sweetness in the same cup of tea. However, the sweetness of this tea appears after the aroma changes in the front. Many people don't quite understand its taste when they drink it for the first few times. But as the number of brews increases, you will find that it is an interesting tea, just like plum blossoms, emitting a subtle fragrance.
